Baja Fish Tacos

Fish tacos make a great summer comfort food – and best of all, they’re healthy! Enjoy this mouthwatering recipe filled with fresh, nourishing ingredients that are as good for your body as they taste!

Ingredients
Tacos
- 1 pound cod loin, raw, 2-ounce portions
- 1 clove garlic, minced
- ½ tsp. chili powder
- ½ tsp. ground cumin
- ¼ tsp. salt
- Dash ground white pepper
- Eight 6” yellow corn tortillas
Lime Crema
- ⅓ cup sour cream (or substitute full fat Greek yogurt)
- 2 tbsp. mayonnaise
- 1 small lime, juiced
Toppings
- Shredded cabbage
- Fresh cilantro
- Avocado
- Lime wedges
- Red onion, sliced
- Cotija or feta cheese
Directions
- Preheat oven to 425 degrees. Mix garlic, chili powder, cumin, salt and white pepper. Using a paper towel, pat fish dry. Rub spice mixture into cod fillets. Place fish onto a lined baking tray and bake 8-10 minutes, until fish is flaky when tested with a fork.
- Meanwhile, make the lime crema. In a small bowl, whisk ingredients and set aside.
- Assemble the tacos with a 2-ounce portion of fish, topped with cabbage, cilantro, avocado, red onion, a lime wedge, and cheese. Drizzle with lime crema.
