Michigan Recipes: Garlic-Parm Roasted Asparagus

Michigan asparagus season is here. Rich in essential vitamins, antioxidants, and pre-biotic fiber, asparagus is a highly anticipated vegetable come spring – especially here in northern Michigan, where its tasty stalks are one of the first signs of green to poke through the thawing ground. Not quite sure how to flavor or prepare your bundle of green goodness? Enjoy this fresh, simple, and above all, healthy recipe from our friends at Shape Up North, a community collaboration we proudly support.

  • Fresh asparagus, trimmed
  • 3 Cloves Garlic (minced)
  • ¼ cup parmesan
  • ¼ tsp pepper
  • Olive oil (for drizzling)

Preheat Oven to 425.

Combine garlic, parmesan cheese, and pepper in a mixing bowl. Line a baking pan with tin foil, parchment paper, or a baking mat. Arrange the asparagus on the pan in a single layer and drizzle with olive oil. Sprinkle the cheese mixture over the asparagus. Bake in the preheated oven for 10 minutes or until tender.
