Healthy Peaches and Cream: Michigan Summer Recipes

Peach fan? If you love to sink your teeth into a sweet peach, you’re in luck because peach season is here! While peaches are a solid solo snack, they make a standout dessert staple. Here’s a recipe that balances the soft sweet peach texture you love with creamy frozen yogurt and crunchy pecans, satisfying your sweet tooth with a healthy dose of Vitamin C, antioxidants, and probiotics.


Recipe

  • 2 ripe peaches
  • ¼ cup chopped fresh mint
  • ¼ cup balsamic vinegar
  • A drizzle of avocado oil (to coat pan)
  • ¾ cup chopped pecans
  • Frozen vanilla yogurt, ice cream, or non-dairy “nice” cream of your choice (look for low-sugar options if you are living with diabetes or monitoring your sugar intake)

Directions

Slice peaches and place in bowl. Pour in balsamic vinegar and allow peach mixture to soak while you heat avocado oil in sauté pan. Add sliced peaches, chopped pecans, and mint to pan. Sauté for 5-7 minutes. Scoop frozen yogurt/ice cream into individual dishes. Top with peach mixture and enjoy!
